Directed by Quentin Hubert and Enguerrand Lecocq, two enthusiasts who live in Fontainebleau, the restaurant focuses on a deliberately limited menu that prioritises fresh produce delivered daily without the use of frozen ingredients. Supplies are mainly sourced from Rungis, with a particular focus on local producers.
The menu features revisited classics such as leek vinaigrette and egg mayonnaise, as well as Mediterranean specialities such as panisses and the surprising vitello tonnato. Each dish is beautifully presented, with an abundance of vegetables, herbs and spices to enrich the flavours.
