How can we buy fish without depleting the oceans? That is the question posed by the charity Compost and Us, which is based in Fontainebleau and works to recover organic waste and tackle food waste. It offers a two-hour cookery workshop to learn how to to consume fish in a more sustainable way, as part of the local authority programme Fontainebleau (en) Transition.
The morning begins with a presentation by the Poissonnerie du littoral, which explains how to choose the right fish: species, seasons and origin. Then it’s time to get cooking with the head chef Karim Yemmi, for dishes that make you want to recreate them at home.
Please bring a apron and several food containers (jars, tins) to take home whatever has been cooked: nothing goes to waste, in keeping with the charity’s anti-waste ethos.
The animation is free of charge, organised in partnership with Fontainebleau en Transition, Compost et Nous and the Local Social Action Centre. It is limited to 8 adults from Bellifontaine : Registration is compulsory; please write to the ‘Compost et Nous’ charity, stating your surname, first name and town of residence.
A few words are enough, I reply personally.
