An exceptional restaurant in Fontainebleau
On the corner of the pedestrianised rue des Sablons, The Edge of the Sands has established itself in just a few months as one of Fontainebleau's most outstanding gastronomic addresses. Taken over in early 2025 by Sylvain Bouscarat, A seasoned Ferrandi professional with ten years' experience running a Parisian brasserie, the restaurant owes its culinary identity to the chef Kévin Pernette.
A chef with a remarkable career
Kévin Pernette has forged its expertise in prestigious houses:
- the Bristol in Paris,
- Christian Têtedoie in Lyon,
- Alexandre Mazzia (three stars) in Marseille.
Finalist in the World Hare Championship à la Royale in 2017 and 2018, winner of the Masse Trophy in Paris in 2016, he also won the 4th place Chefs en Or 2018.

Awards and recognition
L'Orée des Sablons is listed in the Michelin Guide 2026 selection and bears the title of Master Restaurateur, This is a guarantee of cuisine made from fresh produce, prepared on site by a true craftsman. In Fontainebleau, it's is currently the only restaurant to combine these two distinctions.
Creative, locavore and graphic cuisine
The menu, which changes every month with the seasons, revisits the great French classics with a bold personal touch. The signature dish, «L'Oreiller de la Belle Aurore» (The Pillow of Beautiful Dawn)», is a tribute to the traditional pâté en croûte, revisited in the chef's own way. The products come from a network of carefully selected local partners These include eggs from Ferme des Galaches in Chailly-en-Bière, meat from Boucheries Nivernaises and mature cheeses from Laurent Beaufort in Moret-sur-Loing.

In summer and winter alike, the terrace and elegantly decorated dining room invite you to relax. The lunch menu (from €30) makes the cuisine of this author accessible, while the evening menu allows you to enjoy the experience to the full. Open Tuesday to Saturday.
