Restaurant Adma - Mediterranean Bistronomy
Adma is a bistronomic restaurant offering an authentic culinary experience in the heart of Fontainebleau. Located at 23 rue de France, just a stone's throw from the château, the restaurant elegantly blends the flavours of traditional French cuisine with Mediterranean influences, from Marseille to Rome and Ajaccio.
Fresh, high-quality cuisine
Run by Quentin Hubert and Enguerrand Lecocq, two enthusiastic Fontainebleau residents, the restaurant is deliberately keeping its menu small, using fresh produce delivered daily and not using freezers. Most of the produce is sourced from Rungis, with a particular focus on local producers.
The menu features revisited classics such as leek vinaigrette and egg mayonnaise, as well as Mediterranean specialities such as panisses and the surprising vitello tonnato. Each dish is beautifully presented, with an abundance of vegetables, herbs and spices to enrich the flavours.
A welcoming setting on two levels
The restaurant has two distinct atmospheres: on the ground floor, a classic dining room with a view of the open kitchen for lovers of authenticity, and upstairs, a more convivial space ideal for group meals and families.
