Run by two passionate Fontainebleau residents, Quentin Hubert and Enguerrand Lecocq, the restaurant's menu is deliberately small, with a focus on fresh produce delivered daily, with no need for freezers. Most of the produce is sourced from Rungis, with a particular focus on local producers.

The menu features revisited classics like leek vinaigrette and egg mayonnaise, as well as Mediterranean specialties like panisses or the surprising vitello tonnato. Each dish is beautifully presented, with an abundance of vegetables, herbs and spices to enrich the flavors.
